Chocolate PB Protein Balls

I am always on the hunt for something to snack on.  My days are spent chasing a toddler and training for long distance races, so it is important that I choose fuel that is nutritious.  While my palate accepts most things I present it with, it is always a bonus when that fuel is tasty!

Protein balls are a popular way to make your own protein/carb snacks.  I came up with this recipe a few weeks ago, and even my little girl gave it two (chocolate covered!) thumbs up!

The recipe is pretty simple.  Combine all ingredients (except chocolate chips) in a bowl or stand mixer, mix until combined, fold chocolate chips in, and then form 1 inch balls.  If you refrigerate, the balls will be good for a few weeks. If you leave them out (best to keep them in an air tight container!) they will be good for a few days.

Ingredients:

1 cup pb
2 scoops chocolate protein powder (I like Vega Clean Chocolate Protein Powder)
2 tbs cocoa
2 tbs raw honey
1/4 cup chocolate chips

This should give you about 18 protein balls, at about 125 calories a piece.
